There is a moment, just after the cork gives, when a bottle is all promise. Nothing has been poured, nothing has been judged, and the room tends to go a little quieter than it was.
Slowing that moment down is the whole idea of this column. Pour less than you think, wait longer than feels polite, and let the glass do some of the talking.
Let it breathe, then let it speak
Young reds open up with air. Older bottles can fade if you leave them too long. The only reliable test is your own nose: smell it at the pour, again after ten minutes, again after twenty, and notice what changes.
A good bottle is not drunk. It is spent, like an afternoon.
